Hello friends! How’s everyone doing? I made it through a hectic June month! I am glad to be back to “sort of” my normal routine now. What’s your plan for this July? Are you planning any fun activities? Anything food involved with your fun activities? During summer months, the weather is scorching hot, and the very last thing we want to do is overheat our house. We REALLY have NO desire to turn on the stove and oven during this time of the year. But… the problem is we still need to feed ourselves and our family members. The food options at the restaurants are very limited, less healthy, and pricey. So what do we do then? It is not hard to make delicious but simple meals at home, and we can always modify the recipes to our preferences. There are so many fresh produce and herbs available during the summer months, make sure we incorporate those ingredients into our diet!
I do know what you crave lately, but I am really not into preparing/eating heavy meals during this hot weather,so salad and sandwiches work best for me these days. I found us FOUR of the BEST salad/sandwich recipes for this July, and most of them are pretty familiar!
The BEST Veggie Burgers: After trying several of the homemade veggie burger recipes, I refuse to purchase the store-bought one. I like these chickpea veggie burgers the most as it is packed with flavors and nutrients, also it is a foolproof recipe! My friend, Jessica, commented how she can’t believe these veggie burgers are a vegetarian-friendly (lacto-ovo) recipe! I served my veggie burgers with buns, chipotle mayo, romaine lettuce, tomato slices, avocado slices, microgreens, and pickles. The recipe is adapted from Feasting at home.
Colorful Summery Taco Salad: oh boy! When you are super lazy to cook, I highly recommend this taco salad recipe! Why? Because the ingredients used for the salad are pretty much available in your house. Also, this taco salad is so delicious and filling! I served this taco salad with homemade creamy avocado dressing! The recipe is adapted from Feasting at home.
Classic Chicken Salad: Why buy chicken salad from the store, when you can easily put all the ingredients together within 30 minutes? This is a classic chicken salad recipe, but it is so GOOD! I incorporate fresh pickled (homegrown) sweet basil, replacing the fresh tarragon leaves (not a big fan of tarragon flavor). I served this chicken salad over romaine lettuce. 10-minute Tuna Salad: The way to prepare tuna salad is pretty much the same as how we prepare chicken salad (both have very similar ingredients). So if you can make chicken salad, you can also prepare tuna salad. Tuna salad, in my opinion, is a much lighter version compared to chicken salad.
