Happy 2025, my friends! How’s the new year treating you guys so far? I hope everything is well with you all. Over the past two weeks, I have been spending a good quality of time with friends making a bunch of delicious Malaysian food! Other than that, I also spent a ridiculous amount of time correcting myself from writing the previous year’s date. LOL! I don’t know about you guys, but to me, the new year means the opportunity to start over, to be a better us than yesterday. In 2024, we talked a lot about healthy eating tips and I shared quite a bit of easy delicious recipes. Did you get to try some of those tips and recipes? Without further ado, let’s kickstart our first nutrition talk in 2025. This month, we start with some simple, easy-to-follow ideas for healthy eating tips. What do you guys think about healthy eating? All salad meals? Bland, flavorless food? No more dessert? If you are thinking that way, I would like you to know that all of these concerns are invalid. It is very simple to practice long-term healthy eating without compromising much on the flavor.
The better way of practicing healthy eating is to focus on
● Balanced diet (using MyPlate Method)
● Eating in MODERATION: It helps us to overcome the issue of overeating.
● Add VARIETY in diet: It helps ensure us to capture an array of nutrients, vitamins, and minerals that are essential for our body.
● Choose simple, foolproof recipes: It helps us to prepare more home-cooked meals/snacks.
You now have a basic understanding of healthy eating. It is time to make it in practice! Please allow me to share some easy delicious recipes to save you time searching for meal ideas.
Energy bites: Energy bites are my go-to kinda snack. The main ingredients are rolled oats, peanut butter (or almond butter), ground flaxseed, and maple syrup/honey. And you can make them more flavorful by adding extract (vanilla/orange/lemon), chopped nuts, cranberries, citrus zest, and/or chocolate chips. The recipe was adapted from all recipes.
Granola cups: are you searching for a creative idea for breakfast/snack? These on-the-go granola cups are super easy to make, attractive, refreshing, and tasty. Fill these granola cups with yogurt and top with fresh/frozen fruits. TIP: you want to fill these granola cups with yogurt just right before serving, otherwise they'll get soggy. Blackberry Grilled Chicken Salad with Air-fried Goat Cheese: This salad is a WOAH! I literally lost my word after having the first bite of this salad. It is very flavorful, creamy, and filling. I do not like to go through the hassle of deep-frying, that’s why I went for a healthier approach by air frying the goat cheese. And I found the air-fried goat cheese took the salad up a notch. Instant Pot Wild Rice Soup with Spinach & Mushrooms (vegetarian or vegan friendly): this is a creamy and earthy soup! It is perfect for this freezing weather. The recipe is adapted from Feasting at home.
Slow Cooker Chicken Parmesan Pasta: This pasta dish is so easy to make, but is very flavorful. If you have some young ones at home, they will for sure enjoy this pasta dish! I served this chicken parmesan pasta with my favorite broccoli salad (just to have some veggies to go with my meal). The recipe is adapted from Damn Delicious.
Instant Pot Chicken and Spinach Ramen: Are you craving for something cozy, like homemade ramen? Try this instant pot chicken and spinach ramen! This takes no effort to make this cozy meal. This ramen is so good and so filling. The recipe is adapted from Half-baked Harvest.
